Sweet Cream Cherry Cold Brew Popsicles

Layers of sweet cream, sweet cherry compote and mocha cold brew packed into a sweet frozen treat.

Ingredients
  

Cherry Compote

  • 1 ½ cups sweet cherries, pitted and quartered
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • ½ teaspoon pure vanilla extract

Sweet Cream

  • cup half and half
  • ¼ cup sweetened condensed milk
  • ½ teaspoon pure vanilla extract

Mocha Cold Brew

  • 1 cup cold brew coffee
  • 3 tablespoons cocoa powder
  • cup half and half
  • ¼ cup sweetened condensed milk
  • 1 ½ teaspoons pure vanilla extract

Instructions
 

Cherry Compote

  • Combine the cherries, sugar, and lemon juice in a medium saucepan over medium low heat.
  • Let the mixture simmer until reduced and thickened slightly, about 5-7 minutes.
  • Remove the mixture from the heat and stir in the vanilla extract. Set aside and let cool completely.

Sweet Cream

  • In a medium bowl, whisk together the half and half, sweetened condensed milk and vanilla.
  • Evenly distribute the sweet cream among the popsicle cavities.
  • Freeze for 45-60 minutes.
  • Evenly distribute the cherries among the popsicle cavities, over the partially frozen sweet cream mixture. Freeze for 30 minutes.

Mocha Cold Brew

  • Whisk together the cold brew and cocoa powder in a medium saucepan over medium low heat.
  • Whisk until the mixture is hot and the cocoa powder is completely dissolved. Do not boil.
  • Remove the pan from the heat. Whisk in half and half, sweetened condensed milk and vanilla extract.
  • The mixture should be room temperature. If it is still warm, let it cool to room temperature.
  • Divide the mocha cold brew mixture among the popsicle cavities over the partially frozen cherry mixture.
  • Place the mold lid on top, insert popsicle sticks and place in the freezer for 4-6 hours to freeze completely.
  • Remove the popsicles from the mold when ready to serve.

Notes

Popsicles can be stored in the freezer at for up to 3 weeks in an airtight container.
