    Sweet Cream Cherry Cold Brew Popsicles

    The best elements of a sweet cream cold brew coffee all in a popsicle. Layers of sweet cream, sweet cherry compote and mocha cold brew packed into a quick frozen sweet treat. Creamy, fruity, and chocolatey with a smooth coffee flavor, these sweet cream cherry cold brew popsicles are the perfect afternoon pick me up.

    Choosing a Popsicle Mold

    I find that the easiest popsicle molds to use are the silicone ones. This popsicle mold is my go-to for ease of removal and for cleaning. You can also find molds made from plastic or stainless steel. If choosing a mold made out of these materials, choose one that has removable cavities for easier removal of the popsicles from the molds.

    Cherry Filling

    Make the cherry filling first so that it has time to cool.

    • Combine the cherries, sugar, and lemon juice in a small saucepan over medium heat. Simmer the mixture until reduced and thickened.
    • Stir in the vanilla and let cool completely before distributing between the popsicle cavities over the chilled sweet cream.
    • Freeze for an additional 30 minutes.

    Sweet Cream Layer

    This sweet cream layer requires only 3 ingredients:

    • Half and half
    • Sweetened condensed milk
    • Vanilla extract

    Simply whisk the ingredients together and divide among the popsicle cavities. Freeze the popsicles for 45 minutes. Semi-freezing allows each layer to partially freeze before adding the next to keep the layers from mixing together.

    Mocha Cold Brew

    For the mocha cold brew layer:

    • Combine the cold brew and cocoa powder in saucepan over medium heat, whisking until the cocoa has dissolved.
    • Add the half and half, sweetened condensed milk and vanilla and whisk to combine.
    • Distribute the mocha mixture among the popsicle molds, over the partially frozen cherries.
    • Place the top on the popsicle mold and insert popsicle sticks. Freeze for a minimum of 6 hours.

    Freezing and Removing Popsicles

    For molds that have individual removable cavities:

    • Place the mold under hot tap water for a 2-3 seconds on each side, taking care to not get water into your mold.
    • Turn the mold upside down (stick down) and carefully pull the popsicle out of the mold.

    For molds without removable cavities:

    • Fill a casserole dish with hot tap water. Place the whole mold into the casserole dish for about 30 seconds.
    • Remove the mold from the dish and remove popsicles.

    Equipment

    • Popsicle mold

    Ingredients
     

    Cherry Compote

    • 1 ½ cups sweet cherries, pitted and quartered
    • 2 tablespoons granulated sugar
    • 1 teaspoon lemon juice
    • ½ teaspoon pure vanilla extract

    Sweet Cream

    • ⅔ cup half and half
    • ¼ cup sweetened condensed milk
    • ½ teaspoon pure vanilla extract

    Mocha Cold Brew

    • 1 cup cold brew coffee
    • 3 tablespoons cocoa powder
    • ⅔ cup half and half
    • ¼ cup sweetened condensed milk
    • 1 ½ teaspoons pure vanilla extract

    Instructions
     

    Cherry Compote

    • Combine the cherries, sugar, and lemon juice in a medium saucepan over medium low heat.
    • Let the mixture simmer until reduced and thickened slightly, about 5-7 minutes.
    • Remove the mixture from the heat and stir in the vanilla extract. Set aside and let cool completely.

    Sweet Cream

    • In a medium bowl, whisk together the half and half, sweetened condensed milk and vanilla.
    • Evenly distribute the sweet cream among the popsicle cavities.
    • Freeze for 45-60 minutes.
    • Evenly distribute the cherries among the popsicle cavities, over the partially frozen sweet cream mixture. Freeze for 30 minutes.

    Mocha Cold Brew

    • Whisk together the cold brew and cocoa powder in a medium saucepan over medium low heat.
    • Whisk until the mixture is hot and the cocoa powder is completely dissolved. Do not boil.
    • Remove the pan from the heat. Whisk in half and half, sweetened condensed milk and vanilla extract.
    • The mixture should be room temperature. If it is still warm, let it cool to room temperature.
    • Divide the mocha cold brew mixture among the popsicle cavities over the partially frozen cherry mixture.
    • Place the mold lid on top, insert popsicle sticks and place in the freezer for 4-6 hours to freeze completely.
    • Remove the popsicles from the mold when ready to serve.

    Notes

    Popsicles can be stored in the freezer at for up to 3 weeks in an airtight container.
